The mango is one of the finest types of exotic fruit. The Palmer variety originates from southern Florida in the USA and produces medium-sized, broadly oval fruits with green skin, which takes on red hues as it ripens, and occasionally even a hint of orange. Palmer is one of the longest-keeping varieties. The flesh is yellow-orange, with a sweet, slightly tangy and delicately spicy flavour and a distinctive aroma.
Consumption: Mangoes are eaten when fully ripe, ideally chilled. Only the flesh is eaten. The fruit is halved lengthways and the stone removed. The very ripe, soft flesh is scooped out of the halved fruit with a spoon, whilst firmer flesh can be diced and added to fruit salads or ice-cream sundaes.
