Spring onions are young onions harvested before they are fully mature. They are slightly sweet, juicy and less pungent than mature onions. They have a lovely green appearance and a pleasant aroma and flavour. Hollow, tubular green leaves grow directly from the bulb. These leaves are used as a vegetable; they are eaten either raw or cooked. The leaves are often chopped and added to other dishes, in the same way as onions or garlic.
