This is a popular variety of lettuce that resembles head lettuce, but its leaves are firmer and cling more closely together. This vegetable earned the name ‘ice lettuce’ because of its glossy surface, which looks as though it has been frostbitten. Its colour ranges from white to pale green – from the centre to the outer leaves.
