Limes are a type of sour citrus fruit, like lemons; they differ from lemons in that they are green in colour, smaller and less sour. Their colour ranges from green to yellow-green. The inside of a lime differs from that of a lemon only in colour. They are generally more aromatic and juicier than lemons. Lime juice is widely used, mainly in cocktails, but also in salad dressings or for marinades.
