Nectarines, or ‘the hairless ones’, have a more intense flavour than peaches (‘the hairy ones’) and are usually firmer and less prone to bruising. Their flesh is mostly deep yellow, though sometimes creamy white. The flavour of a nectarine is distinctive, combining notes of both a ripe peach and grapes. They are usually eaten fresh or used in desserts and for making jams and compotes.
