Basil typically has a spicy, slightly sweet flavour and aroma. However, some varieties may also have an aniseed or cinnamon (‘Cinamonette’) or lemon (‘Lime’) aroma and flavour, whilst other varieties are noticeably sweeter and are therefore better suited to fruit salads (‘Blue Spice’).
Basil is excellent with tomatoes and mozzarella. It is also added to pizza, pasta, minced meat and vegetable dishes. It gives dishes a touch of Mediterranean cuisine. It is often added to soups and marinades.
