Jihočeská Niva is a matured cheese with blue mould (Penicillium roqueforti) within the cheese. This type of cheese belongs to the blue-mould cheese family (similar to Roquefort or Gorgonzola) and has a more pronounced flavour and aroma compared to ordinary white cheeses.
